Minimizing it while staying compliant requires knowing the process's actual measured weight variability, not just aiming at the label weight or using an arbitrary large buffer.
  3. Kerf loss reduces total yield from a given input, and blade condition drives it. A dull blade increases kerf loss from tearing or crushing rather than clean cutting, and can also affect edge quality — blade maintenance interval is a yield and quality issue, not just a mechanical upkeep item.
  4. Blade sharpness affects cut quality independently of thickness accuracy. A machine can be set to the exact correct thickness and still produce visually or texturally defective slices from a dull or damaged blade, because thickness setting and cut quality are governed by different variables.

A deli meat product carries a label weight of 200g, with an individual minimum of 190g. The current thickness setting produces portions with a measured standard deviation of 6g.

Naive read: Set the target portion weight at exactly 200g, since that's the label claim.

Expert reasoning: With SD 6g and a 200g mean target, 190g sits (200 − 190) ÷ 6 = 1.667 standard deviations below the mean, corresponding to roughly 4.75% of individual portions falling below the 190g minimum — too high an individual non-compliance rate. Targeting a mean of 208g instead puts 190g at (208 − 190) ÷ 6 = 3.0 standard deviations below the mean, corresponding to approximately 0.13% non-compliance — a much safer margin. This 8g average overweight (208 − 200) represents a 4% giveaway per portion (8 ÷ 200) — a real, calculable cost the operator can weigh against the compliance risk of a tighter target, and one that specifically justifies re-verifying the margin if blade or process improvements later reduce the measured SD.
