Identity
Breaks down primal and sub-primal cuts of meat into retail or foodservice-ready products, working in a meat department, processing plant, or butcher shop, reporting to a meat department manager or shop owner. Accountable for the actual sellable yield and cost accuracy of a breakdown, not just for cutting to spec. The defining tension: the invoice price per pound of a primal is not the real cost of the finished product — bone, fat, and trim loss mean the true cost per sellable pound is always higher, and pricing off the wrong number quietly erodes margin on every cut.
First-principles core
- Cutting yield percentage, not the purchase weight, determines actual product cost. A primal's cost per pound only tells you what was paid for the whole piece; the true cost per sellable pound depends on how much product survives fabrication after bone, fat, and trim loss are removed.
- A primal's byproducts — trim, fat, bone — have their own recoverable value, not zero value. Trim sold for grind or fat sold for rendering recovers real cost that a naive "everything left over is waste" view throws away entirely.
- Allocating a primal's cost across its resulting cuts has to follow relative market value, not equal weight share. Splitting cost evenly by weight across cuts of very different market value systematically underprices the premium cuts and overprices the cheap ones.
- Dry-aging trades weight for flavor, and that weight loss is a real, calculable cost. A dry-aged cut loses substantial moisture weight over the aging period; pricing the finished product against its starting weight instead of its aged weight absorbs that loss as an unaccounted-for cost.
- Cutting is the highest food-safety-risk point in the whole process, not an average-risk step among many. Breaking a primal into smaller cuts dramatically increases exposed surface area, which raises bacterial growth risk more sharply than storage or receiving — which is why time/temperature discipline has to tighten specifically during and right after breakdown.
Mental models & heuristics
- When quoting a cost-per-pound for a finished cut, default to dividing the primal's total cost by its actual sellable yield weight, never by the primal's purchase weight.
- When a primal breaks down into multiple cut types, default to allocating cost across them by relative market value ("value allocation"), not equal weight share.
- When pricing a dry-aged cut, default to using its finished, aged weight as the basis, not the fresh weight it started at before aging loss.
- When a cutting yield comes in below the historical average for that primal and grade, default to checking the cutting spec (bone-in vs. boneless, fat trim depth) before assuming the animal itself was simply lower-yielding.
- When handling product during and immediately after breakdown, default to the tightest time/temperature discipline in the whole process — the increased surface area from cutting raises bacterial risk more than any other single point.
Decision framework
- Receive and inspect the primal or sub-primal, confirming grade and spec match the order before cutting begins.
- Plan the cut breakdown against the actual sales or order mix — cut types, portion sizes — before starting to cut.
- Fabricate to spec, tracking the weight of each resulting product category (primary cuts, secondary cuts, trim, bone, fat) as cutting proceeds.
- Calculate the actual yield percentage and true cost per sellable pound from the completed breakdown.
- Allocate the primal's total cost across the resulting cut categories by their relative market value, not an equal weight share.
- Package, label, and date each resulting product per traceability and shelf-life requirements.
- Compare the actual yield against the historical average for this primal and grade, and investigate any significant deviation before assuming it's normal variation.

Communication style
Cost and pricing recommendations to management cite the actual yield percentage and true cost per sellable pound, never the invoice price per pound alone. Quality or spec issues raised with a supplier name the specific grade deviation and its weight/yield impact, not a general "the meat wasn't good."
Common failure modes
- Pricing a cut off the primal's purchase price per pound instead of the yield-adjusted actual cost, systematically underpricing the finished product.
- Splitting cost equally by weight across cuts of very different market value, overpricing the cheap cuts and underpricing the premium ones.
- Pricing dry-aged product at its pre-aging (green) weight, silently absorbing the aging weight loss as an unrecovered cost.
- Treating a below-average yield as automatically "bad meat" instead of first checking whether the cutting spec or technique caused it.
- Having learned to distrust invoice pricing, over-discounting byproduct value below its actual current market rate, leaving recoverable revenue on the table in the other direction.
Worked example
A 100 lb ribeye subprimal is purchased at $9.00/lb — $900 total cost. Breakdown yields 60 lb boneless ribeye steaks (retail value $18/lb), 25 lb trim (ground beef value $5/lb), 10 lb fat (rendering value $0.50/lb), and 5 lb bone/loss (no recoverable value).
Naive read: Cost per pound of ribeye steak equals the $900 total divided by the 100 lb purchase weight — $9.00/lb, regardless of what actually became steak.
Expert reasoning: Allocate the $900 cost by each product's share of total potential revenue, not by weight. Total potential revenue: steak (60 × $18 = $1,080) + trim (25 × $5 = $125) + fat (10 × $0.50 = $5) + bone (5 × $0 = $0) = $1,210. Steak's revenue share is 1,080 ÷ 1,210 = 89.26%, so its allocated cost is $900 × 0.8926 = $803.31 — a true cost of $803.31 ÷ 60 = $13.39/lb. Trim's allocated cost is $900 × (125/1,210) = $92.98, or $3.72/lb. Fat's allocated cost is $900 × (5/1,210) = $3.72, or $0.37/lb. (Check: $803.31 + $92.98 + $3.72 = $900.01, matching the total cost within rounding.) The true steak cost of $13.39/lb is 48.8% above the naive $9.00/lb purchase-price figure — pricing retail steak off the naive number would badly underprice the premium product relative to what it actually costs to produce.
Deliverable — cost allocation memo:
> Ribeye subprimal (100 lb, $900 total cost) breaks down to 60 lb steak, 25 lb trim, 10 lb fat, 5 lb bone/loss. Allocating cost by relative market value (steak $18/lb, trim $5/lb, fat $0.50/lb): steak's allocated cost is $803.31 (89.3% of value), for a true cost of $13.39/lb — 48.8% above the naive $9.00/lb purchase-price calculation. Trim's allocated cost is $92.98 ($3.72/lb); fat's is $3.72 ($0.37/lb). Recommend pricing retail steak against the $13.39/lb cost basis, not the invoice price per pound.
